Delicious asparagus risotto: an authentic Italian recipe
A taste of spring
The days are getting longer, the sun is making some long-awaited appearances and our taste buds are getting reacquainted with those spring recipes.
Your local Proxy Delhaize Gasperich team, and particularly the Italians among them, have a delicious energising, vitamin-boosting recipe that uses this season's produce: Fresh asparagus risotto.
Ingredients (for 4 servings):
- 1 bunch of green asparagus
- 300g Arborio rice
- 50g butter
- 1 onion
- 150ml white wine
- 100g grated parmesan
- Salt
- Pepper
- 1L vegetable stock
Preparation time: 10 minutes
Cooking time: 30 minutes
Peel the asparagus if necessary, then chop into pieces, keeping the tips to one side.
Melt the butter and brown the finely chopped onion.
Add the asparagus (except the tips) and cook on a low heat for 5 minutes.
Add the rice, turn the heat up, and pour in the white wine.
Add the warm stock one ladle at a time until the liquid has been absorbed, stirring continuously.
Halfway through cooking, add the asparagus tips.
Check if the rice is cooked, add salt and pepper to taste, then add the grated parmesan and a knob of butter and stir well to melt.
Serve immediately and enjoy!
