A yummy Italian recipe? Yes please!

Duck Ragu with Caciocavallo

Ingredients for 4 servings

  • 1/2 duck
  • 100 g mixed vegetables (celery, carrot, onion)
  • 15 g finely chopped fresh herbs (rosemary, marjoram, oregano, thyme, parsley, sage)
  • 3 l red wine
  • 300 g Caciocavallo cheese
  • salt and pepper
  • olive oil

 

Start with the celery, carrot and onion to prepare the cooking sauce, by cutting them neatly into 1-cm cubes. Take the fresh herbs and chop them finely.

Take a casserole dish, heat the oil and fry the vegetables until lightly golden. In the meantime, cut the meat to your preferred size (2-cm cubes recommended).

Once the vegetables are golden, add the meat and allow it to brown at a high heat, seasoning everything with salt, pepper and the finely chopped herbs. The aroma will be intense, your mouth will be watering already!

Next, add the red wine (be generous) and allow it to reduce, stirring regularly until the wine is almost dry. Add stock or boiling water, cover with a lid and allow to simmer on a moderate heat for at least 2 hours.

Next, boil some water for the pasta of your choice. Grate the Caciocavallo over the mixture of pasta and ragu and then sprinkle everything with fresh parsley.

Nothing left to do but enjoy.
