Delhaize

Carottes rôties au miel, pois chiches et mozzarella

We all like to start the year off with good resolutions, including a healthier diet. To help us do that, Delhaize has given us an easy, healthy vegetarian recipe. Roll up your sleeves and let's get cooking!

Ingredients for 4 servings:

  • 800 g carrots
  • 1 can of chickpeas
  • 80 g roasted and salted cashews
  • 4 balls of mozzarella
  • 2 tbsp balsamic vinegar
  • 4 tbsp blossom honey
  • 4 tbsp olive oil
  • 1 tbsp herbes de Provence
  • Salt and pepper

Preparation time: 15 min + 35 min cooking

1. Preheat the oven to 180°C. Drain and rinse the chickpeas well in cold water. Peel the carrots and cut them in half lengthwise. Cover a baking tray with baking paper. Put the carrots and chickpeas onto the baking tray, add pepper and salt and sprinkle with herbes de Provence. Drizzle half of the olive oil on top and mix well. Spread evenly. Roast for 25 min.

2. Add the coarsely chopped cashews, drizzle with honey and continue cooking for another 10 min.

3. Serve hot or cold, with the mozzarella torn into pieces or cut into thick slices. Season to taste, then drizzle on the balsamic vinegar and the rest of the olive oil. Serve with bread.

Tip: Try adding some basil leaves!
